Mom's Work-of-Genius Chutney

What you need: 

1 chopped onion
1 semi-sweet apple, thinly sliced
1 can of pizza tomatoes (unflavored)
3 - 4 teaspoons of brown sugar or agave nectar
a bit less than 1/4 cup of cider vinegar
3-4 dried apricots, chopped or a handful of raisins
1/2 teaspoon of mustard
a bit of water
salt and pepper to taste

What you do: 

Mix onion, apple, tomatoes, sweetener of choice, water, and vinegar in a medium sauce pan and heat. After a few minutes, add the dried fruit, and mustard, and let it simmer for about 10 minutes or until thickened. Add salt and pepper right at the end.
I didn't even add salt and it was delicious. This is actually meant to be eaten with lentils but we have had this as a dipping sauce, on salad, with millet, and also mixed with pasta, and it has always been ridiculously delicious.
This recipe comes from my mom.
