Mom's Banana Bread Made Vegan

What you need: 

1 cup of sugar (I use Florida crystals)
1/2 cup of butter substitute (Earth Balance)
egg substitute for 2 eggs (2 tablespoons of flax, ground up works well, and 6 tablespoons
of water)
3 bananas (though 2 will work)
1 teaspoon baking soda
1 1/2 cups of flour
1/4 teaspoon of salt
1 teaspoon of vanilla

What you do: 

Put all of the above ingredients into a bowl and beat together with a mixer until smooth. Pour into a greased loaf pan and bake for roughly 45 minutes at 325 degrees or until a toothpick comes out clean. It may take slightly longer to cook than 45 minutes.
This recipe works well at both sea level and higher altitudes (I usually add an extra bit of flour for cooking at altitude).

SO HOW'D IT GO?

So Delicious!! Just like banana bread should be.  I used whole wheat flour (i think it was pastry flour) and added walnuts.

Seriously, I have made this recipe more than any other recipe I have EVER had! I printed it out and the paper its on is now SOOO dirty haha cause I have made it so many times! I have a big company dinner for my employees once a month and I always make this, EVERYONE loves it. I usually don't tell anyone untill after they eat it all that it is vegan and they never believe me. I pile in the walnuts and it always comes out so perfect! The only problem I ever had was when I ran out of egg replacer and I used ground flax instead. It was still good but it came out extremely "gooey" and it didnt rise or cook all the way. But other than that this is the perfect down home banana bread for any occasion! BRAVO to whoever created this recipe.

This was excellent banana bread.  Just like I remembered it growing up.

I add a banana for the egg substitute (along with 1/2 t. baking soda), and another banana as the butter substitute (however, I also add a tablespoon of oil, too). I cut the sugar down to 3/4 of a cup, and use 3/4 a cup of whole wheat flour and 3/4 cup of regular flour. Then I add about 1/2 cup chopped walnuts. Yum yum! :)

I made this yesterday and it was a hit!  :)  I used only 1/2 cup of sugar though since my bananas were so ripe.  Unfortunately, I only had 2 bananas but it still came out good.  I can hardly wait until I have three bananas that are as ripe.  I will have to make it again.  I used olive oil to grease the pan and that came out well.  I'll have to try the coconut oil sometime.

This was a very moist, delicious banana bread.  I made a few changes:  I used raw coconut oil for the fat; I used 1/2 maple syrup instead of a cup ofsugar (that was plenty sweet since my bananas were really ripe), and I substituted 1/2 cup of the flour with wheat germ (because I was out of whole wheat flour.)  I used the flax seeds instead of the eggs; finally, I added some shredded coconut.  I took this loaf to a picnic and people were crazy about it (and amazed it was vegan.) I will definitely make this again!

my banana loafs usually turn out very dense because of the flour, but still really yummy.

Hey shortie, I used to think that too, it actually has something to do with CO2 aeration.  Fix it by reducing the amount of sugar and eliminating baking soda.  8)

mypiglikestofu, i use a very simliar recipe when i make banana bread but do always use whole wheat flour, haven't ever put vanilla in, don't usually bother with the salt, and i only use about 1/2 a cup of sugar.  because the bananas are so ripe, they make it very sweet so i find that less sugar is needed.  my banana loafs usually turn out very dense because of the flour, but still really yummy.

(WARNING: TOOO GOOD , YOU MAY EAT IT ALL IN ONE DAY, AND IN ONE SITTING)
I omitted the vanilla though and I used non trans fat vegetable oil instead of butter and I also used flax seed for the eggs. I also doubled the recipe for two loaves (I used 6 bananas) and this was insanley delicious. I want to work with this recipe more,try less sugar & oil, maybe pastry wheat flour and try to make it healthier so I can eat it more often! Thank you for the fantastik yummy recipe!
