Mom's Banana Bread Made Vegan

What you need: 

1 cup of sugar (I use Florida crystals)
1/2 cup of butter substitute (Earth Balance)
egg substitute for 2 eggs (2 tablespoons of flax, ground up works well, and 6 tablespoons
of water)
3 bananas (though 2 will work)
1 teaspoon baking soda
1 1/2 cups of flour
1/4 teaspoon of salt
1 teaspoon of vanilla

What you do: 

Put all of the above ingredients into a bowl and beat together with a mixer until smooth. Pour into a greased loaf pan and bake for roughly 45 minutes at 325 degrees or until a toothpick comes out clean. It may take slightly longer to cook than 45 minutes.
This recipe works well at both sea level and higher altitudes (I usually add an extra bit of flour for cooking at altitude).

SO HOW'D IT GO?

This is soooo good. I used applesauce for half the oil & use about half the sugar. I used about 1/4 white sgar & 1/4 brown sugar. I also added some pecans. I love this recipe!

SWEET! ~What a find, & so simple. I did add nutmeg & cinnamon on top b4 putting into the oven.  I will make again for sure.

Delicious! I followed this recipe, adding walnuts and whole wheat flour and it turned out amazing. My parents even love it and can't believe it's vegan. Thanks a bunch! ;)b

this recipe is amazing!  i really didn't think it'd be as moist as i remember traditional banana bread to be.  i also had to cook it longer...about an hour and 5 minutes and also cut back on sugar to 3/4c.  i made this last night with the intention of saving half a loaf for myself and my boyfriend and giving the other half to my parents but we ate too much of it!  this morning i made a whole loaf for my parents...i dunno how anyone can resist eating this whole thing.

how much does it rise in the pan?

Mine didn't rise too high.  almost to the top.  i split it into 4 mini loaves, so i have yet to see how one standard size loaf comes out.

mine rose all the way and a bit over the top! it was perfect...i really should have taken a picture. but it was just so yummy, it gone in about an hour!!1

This bread was soooooo good.  Banana bread was one of my favorite treats as a kid and I have been craving a good loaf for a while (YEARS).  This bread was moist and perfectly sweet.  Outstanding.  I ran out of my white sugar, so I did half a cup white and half a cup brown sugar plus a dash of cinnamon.  Mmmmmmmmmmmmmmm.

oh my goodness...this bread is waaay, way too good! it is the best banana ive ever tasted! (i should take a picture before its gone!)
the only things i did differently were: 1/3 cup canola oil for eb, 1/2 cup sugar, added 1 tsp of cinnamon, and 1/2 cup applesauce for the eggs.
this is simply perfect!

p.s my frozen bananas worked really well!

note: i cooked my loaf at 350 for a little over 1 hour.
