Mock Tuna Salad

What you need: 

1 (15 ounce) can chickpeas, drained and rinsed
2 tablespoons vegan mayonnaise or pureed silken tofu
1 tablespoon sweet pickle relish
2 teaspoons spicy brown mustard
salt and pepper, to taste

What you do: 

1. In small bowl, mash chickpeas.
2. Add mayonnaise or silken tofu, pickle relish, mustard, salt and pepper, and mix well.
This is wonderful in a whole-wheat pita with sprouts and some chopped tomato!

I have made this many times, but today, I put it on bread with vegan cheddar, and sliced tomatoes, buttered (margarined) the outsides, and grilled it up like a grilled cheese sandwich.  Sort of like a mock tuna melt.  Very good.

This was SOOOOO delicious on homemade sunflower seed crackers!  I couldn't stop eating it!

Sorry about the giant picture with that last posting.  A boo boo on my part.  Still getting the hang of this.  Haven't figured out how to download the photo onto the vegfriends.  Doesn't seem to work there.

I liked this right out of the bowl.  But it definitely lacked something in a sandwich.  I'm sticking with Tofurky for now.

Sorry....I used mayo instead of tofu and I added some chopped onions.

Took this on a skiing trip with my family this weekend, I don't care what anyone says, that stuff tastes just like tuna fish. I added a touch of white vinegar and some kelp powder, other than that, I followed the recipe to a "T". I let it sit over night and ate it the next day for lunch with celery sticks -HEAVEN  ;)b. Even the non-vegans and their children enjoyed it. Way to go, thanks for the recipe.

Definately need the vegan mayo to get the "taste" right.  Was more like a mock EGG salad.  Tasted nothing like tuna, unless you use some sort of fish tasting spice.  I didn't use tofu in this recipe.  Not sure if i would make this again.

I have made this many times, and I must say, I was quite skeptical at first, but wonderfully suprised.  I had always added a ton of stuff to my tuna salad, so I added the same to this.  I added onion, celery, dill pickles, dill seasoning, a dollop of mustard, some spices, and I did use the veganaise.  I took it to work (as I do ALL my new dishes) and made everyone have a taste.  Everyone thought this was great.  It's good on crackers, as well.  Go here to check out my picture of it on my blog: http://www.photoblog.com/veganess/2007/09/12/vegan-mock-tuna-salad.html

OMG this was SOOOOO GOOD!  I think the secret is the mustard. My non veg husband loved this, we made sandwiches with whole wheat toast and we loved it so much that we scooped up the rest of the bowl with crackers and celery sticks. The recipe was good as is but we added another tablespoon of veganaise, one more teaspoon of mustard and an addition tablespoon of relish just because we LOVE condiments. Oh and last but not least we added freshly crushed sea salt and black pepper for taste and we also added celery to give it a crunch! Definitely try this recipe I have made many mock tuna's and this is my favorite and the easiest!  :)
