Miso Mayo Tofu McMuffins

What you need: 

1 vegan English muffin
1 slice vegan bologna (Smart Deli)
1 slice vegan rice milk pepper jack cheese
extra firm tofu
miso mayo
vegan butter (I use Earth Balance)
peanut butter, optional
mustard, optional
soy sauce, optional

What you do: 

This sounds weird but it's good I swear! All ingredients can be purchased at Wholefoods.
Cut 1/4 inch slice of tofu wide enough to cover English muffin. Cook tofu in oil and add whatever flavors you like. (Sounds weird but I use a spoonful of peanut butter, mustard and a couple squirts of soy sauce. I also use these for tofu scramble with garlic and curry.) Toast English muffins and generously spread butter on both sides of both pieces. Place tofu and remaining ingredients on muffin. I love miso mayo, so I spread it on both muffins, it brings out the mustard and soy sauce flavor in the tofu too!
