Roast Red Caps SauceIngredients (use vegan versions): 500g Red Capsicum (peppers)
1 tin toms
large bunch of basil (for a fuller flavour try Thia
2 spanish onions
4 cloves of garlic
100g sun dried toms
black pepper
1/2 teaspoons of chilli sambal
1/2 olive oil
Directions:Serves: 4.
Preparation time: 1 hr.
First, place caps under grill and roast till blackned and then remove skins. In a blender process basil, garlic, olive oil, black pepper, chilli sambal. Then, place contents into pot. Process the toms and add. Cook 1/2 hour on low heat. Add skinned caps that have been processed and cook for 5 minutes. Serve with favourite pasta. Enjoy.
