Microwave Brownies

What you need: 

1 banana, mashed
3/4 cup sugar
1/4 cup olive oil
1 teaspoon vanilla
1 cup flour
1/4 cup cocoa
1/2 teaspoon salt
nonstick spray
chocolate chips, to taste

What you do: 

1. Grease a small microwave safe dish. In a bowl, mix together the banana, sugar, olive oil, and vanilla.
2. Stir in the flour, cocoa, and salt. Put prepared dish. Sprinkle with chocolate chips.
3. Microwave on high for 4 to 5 minutes (depending on how gooey you like them). Adjust the cooking time based on the power of your microwave.
Great for late night studying Snacks. You could probably even add some instant coffee to them before you cook them.

SO HOW'D IT GO?

last weekend i made these microwave brownies.... i loved them, but i ate them all by myself.... my mom and little brother (who aren't vegan never like anything i make anyways...) said they could really taste the olive oil and my vegan boyfriend HATES bananas.... so i ate them alone (not a good idea for the tummy). last night (with the same people around) i made the microwave brownies (great concept BTW) again but i tweaked them a little. heres how it went down...
1/4 cup vanilla soymilk, heated to 98 degrees (or so)
1 tbsp dry active yeast
1/3 cup sugar-free applesauce
1/4 cup vegetable oil
1 tsp amaretto liquor (or vanilla)
3/4 cup sugar
1 cup flour
1/4 cup coco powder
1/2 tsp salt
chocolate chips, peanut butter, raspberry jam..... whatever toppings.
mix warm soymilk with yeast, let stand for 4mins, or until bubbly.
meanwhile, mix dry ingredients. when yeast bubbles, add other wet ingredients, mix. add wet to dry and plop into greased microwaved bowl. 4-5 mins in microwave and then let stand for a couple mins before you cut into them. add toppings all over or for  individual servings.
>>this time the brownies REALLY tasted chocolaty, no overwhelming banana or oil....
please leave feed back so i know if I'm not crazy, and if i should ditch this recipe.... my guests liked it much better the second time around.....

This was definitely delicious. I made it for my younger cousin's sleep over but I loved it so much I make it all the time. (Not sure how healthy that is-oh well) I never knew you could make brownies in  a microwave.

i think because i didn't add any extra liquid to the batter, didn't have any chocolate chips, and may have cooked it a bit too long mine came out pretty dry.  it was kind of like a chocolate-banana brick.  but i put some peanut butter frosting on it and ate it anyways!  definitely a really cool idea, i'll try it again in the future and make a few adjustments

i replaced the mashed banana and sugar with some banana syrup, that worked really great! it was binding and sweetening at the same time. i also left out the oil and just took some water, no problem. great recipe!

These are soooooooooo good!  ;D  I liked the original recipe, but have since made a couple of variations.

For "cake": Use two bananas instead of one banana and a 1/4 cup oil, add 1/8 cup soymilk, sprinkle with plenty of vegan chocolate chips, and microwave for 5-6 minutes.  When removed from the microwave, take a knife and spread it across the top of the cake to "frost it" with the melted chocolate.  I've found that vegan chips take forever to solidify at room temp, thus they make a quick frosting substitute. 

For a low-sugar version: Use 12 packets of SweetLeaf brand stevia instead of the 3/4 cup sugar.  I specify SweetLeaf because the amount of stevia needed to replace the granulated sugar will vary by brand.

These are delicious!  I prefer to use corn starch/water, egg replacer, or just a few tablespoons of chocolate soy milk, rather than the banana b/c my family doesn't really like the hint of banana flavor in the finished product.  I made these last night with dark cocoa powder and Ghirardelli semi-sweet chocolate chips, and they were so chocolatey and fabulous!  And it only took about five minutes of prep, then the five minutes in the microwave.  Fantastic!

Wow, I didn't realize something could taste so good out of the microwave.  I cooked it for about 4 minutes which was too long as I like them really gooey and they turned out, well, not...I just added a small handful of chips, but I will definitely add more next time.  I may try applesauce next time too instead of banana, cause there was a hint of banana taste that I could do without.  A great recipe though!

I just made this.  It's pretty good, and like the recipe says, it only takes about 10 minutes to make!  The texture is definitely a little different from an oven brownie (it doesn't have any crispy parts; it's very soft), but I liked it.  Definitely worth trying!

I added soymilk to mine, because it'd have been too dry without it.  Also, I cooked for 4 minutes, then 1, then 1 again.  That was about right, but the center is a little uncooked still.  I will just eat the pieces around it and cook again.

These didn't taste very good and they turned rock solid minutes out of the microwave. They still curved my choco craving, though, even if I had to bite off the whole thing.

These turned out really good -- chocolate-y, chewy squares of YUM!! Plus, the recipe and assembly was simple enough that my three-year-old daughter was able to help out and feel like she'd done the whole thing by herself!  :)
