Mexican Rice

What you need: 

1 cup wild rice
1 340 mL can dark red kidney beans, drained and rinsed
1 small can corn, drained
1 package Mexican rice seasoning
medium green pepper, chopped
small onion, chopped
hot sauce, as much or as little as you like

What you do: 

Cook rice with seasoning, following package directions. While rice is cooking, sautee onion and green pepper in a small pan until softened and onion is clear. When rice is cooked add beans, corn, onions, and green pepper. Stir in hot sauce (the more the better!!) Serve immediately.
Leftovers store really well in the fridge and may be reheated or are also good cold.
Note: this recipe is only a basis for an endless possibility of combinations, so use your imagination and add whatever you'd like to the rice!
