Mexican Quinoa Ensalada
1 cup of uncooked quinoa
1 cup of black beans
2 Roma tomatoes
1 Serrano pepper
1/2 cup of Cilantro
1 small red onion
Boil quinoa with 1 and 1/2 cups of water. Once it starts to boil put lid on and turn down to light simmer for 15 minutes. Once done take off of heat and let sit for another 5 mins.
Deseed and dice tomato and serranos and put in a bowl. Finely dice cilantro and red onion and combine with tomatoes and peppers. Slice lime and squeeze over veggies.
Heat black beans and sit aside
To complete dish combine 1 cup of quinoa, 1/2 cup of black beans, around 1/2 cup of Pico de gallo(veggies) and cube half an a Avacado and and add to your bowl.
My wife and I love this, she likes to add corn. Enjoy!
