Mexican Haystacks

What you need: 

1 bag tortilla chips
2 cups cooked rice
1 can refried beans, warmed
1 can black beans, warmed
various favorite nacho/taco fixings: shredded lettuce, diced tomatoes, diced Onions, sliced jalapenos, sliced black olives, etc...
optional: vegan burger-style crumbles seasoned with taco seasoning instead of or in addition to beans

What you do: 

Put chips on plate. Add rice. Add refried beans, black beans and or crumbles. Then top with favorite nacho/taco fixings. Eat like nachos and scoop with chips.
Children enjoy building these and eating them too! YUM!
