Mel's Vegan Banana Bread

What you need: 

2 cups whole wheat flour
1/2 teaspoon baking powder
1 teaspoon cinnamon
1/4 teaspoon cloves
1/2 teaspoon salt
1/2 cup pecan crumbs, optional
1/2 cup brown sugar
1/2 cup white sugar
1/2 cup vegan margarine (you can also use canola oil or applesauce)
1 teaspoon vanilla
1/4 cup nondairy milk
3 ripe bananas, mashed

What you do: 

1. Preheat oven to 350 degrees Fahrenheit. Grease 1 bread pan. Mix together all dry ingredients in a large bowl.
2. In a separate bowl, beat together all wet ingredients. Pour wet ingredients into dry while stirring, only stir until everything is combined.
3. Pour into prepared pan and bake for 60 to 70 minutes.
Source of recipe: This banana bread is moist, the perfect sweetness and can be altered to your taste. You can add raisins, dried fruit, or vegan chocolate chips (my favorite)!

My 3 year old loves them.  They are very sweet.  Cloves were an interesting addition.  Thank you!

Geourgous banana bread.  I couldn't stop myself going back for a little bit more all the time.  The kids loved it too!

Good stuff.  I added chocolate chips, pecan pieces, and dried cranberries.  I also had 4 bananas that were on their way out, so I threw all of them in.  Baked it for 60 minutes, and it was a little under-cooked in the center, probably because of all the extra stuff.  Still very tasty, though!  :-)

i made these into muffins and they so so yummy! they are very sweet, so just be aware that they are more banana cake than banana bread..

what i did was this:
i used all raw sugar instead of brown and white, rice milk/coconut milk mix, oil instead of margarine, white flour with a handful of oats instead of whole wheat, and whole sunflower and flax seeds instead of the pecan crumbs :)

Also, since they are muffins, I cooked them for 25 mins..

Awesome! I do that with this recipe too, I like adding chocolate chips and pecans and I always lower the sugar quite a bit. Its a pretty easy banana bread/ cake recipe to make into your own:)
