Matt and Pauls Potato Salad

What you need: 

1 lb. white creamer potatoes
1 white onion
3 cloves garlic (or to taste)
3 tablespoon vegan mayonnaise
1 tablespoon your favorite mustard
1 cup extra firm tofu
1/4 fresh lime juice
1/2 cup fresh dill (or to taste)
salt and pepper to taste

What you do: 

Boil potatoes until soft.
In a mixing bowl, combine the onion (diced), garlic (crushed), tofu (diced), mayonnaise, mustard, lime juice, dill, salt and pepper.
Halve the individual cooked potatoes and add to the mixture warm. Stir with love and enjoy! Can be served warm or cold.

SO HOW'D IT GO?

The only thing I left out was the tofu, and this came out great!  Love the dill and mustard combination.  Thanks!
