Mango Vanilla Sherbet
2 cups frozen mango chunks
1/2 to 1 cup vanilla soymilk
1) Use a blender or food processor to puree mango chunks and soymilk, pouring in the soymilk gradually between intervals of blending. Sweeten if desired. Once the mixture reaches a thick but smooth consistency, transfer it to a container with a lid and place it in the freezer for 1 to 2 hours. That way it will be more like ice cream and less like yogurt.
