Mango Cobbler -- Raw style!

What you need: 

2 fresh mangoes
1/2 cup dates
1/3 cup raw pecans
2 tablespoons shredded coconut (use an unsweetened dry one)

What you do: 

1) Prepare the mangoes by cutting them both into a nice, medium sized dice. Place into a small bowl.
2) To make the topping, place the dates, pecans, and coconut in the food processor and "pulse" until everything is finely chopped. You want it to have some texture and not be a "mush."
3) Once topping is ready, place it on top of your mangoes. You can dig in OR, if you want it "warm", place it in your dehydrator. Dehydrate for a couple hours and you'll have a nice, warm cobbler treat to eat.

SO HOW'D IT GO?

Holy moly! This was amazing. I love that it has just a few ingredients and only takes a few minutes to make, but it tastes gourmet. I will make this for my next dinner party for sure. Thank you!

Yum! I forgot to add the dates, but it was still delicious. I used sunflower seeds, almonds, and pumpkins seeds and I can't wait to try it next time with the dates, too!

fab recipe, completely fab. i love apple crisp but i don't want sugar and im loving raw and so this worked on both levels. way too wonderful...thanks!

It is delicious! I added some hemp hearts to the topping (about 1/4 cup). I also added a diced pear to the mangoes and used walnuts instead of pecans.

This is realllly good. I added raisins, cranberries and one medjool date as well as the coconut for the "cobbler" and switched pecans with almonds. i put it over mango, peach, and apple and "heated" it up...DELICIOUS! Thanks for the inspiration :)
