Malaysian Tofu

What you need:

1 block firm or medium firm tofu
1/4 cup whole wheat flour
olive oil
1 teaspoon fresh ginger
1 - 2 cloves fresh garlic
1/2 cup peanuts (preferably roasted)
1/2 carrot or beet (or both)
pinch of salt
love

What you do:

Cut tofu in to cubes or thick slices. Lightly coat with flour and fry in a little bit of olive oil, until golden on all sides (or toss with a little oil and bake).
In a blender or food processor combine remaining ingredients with a tablespoon or more of olive oil (as much as needed to blend smoothly)
Spoon over warm tofu, and enjoy!

I was pretty much looking for how to get that golden edging around the tofu cubes, the way I get served at restaurants. It worked great, next time I will definitely be trying the toppings!
