Making Your Own Spaghetti Sauce

What you need: 

organic pasta
2 cans organic diced tomatoes
2 cans organic tomato paste
1 tablespoon oregano
1 bay leaf
salt and pepper to taste
1 tablespoon organic sugar
1/2 organic onion, diced
1/2 green pepper, diced
dollop of mustard, optional
1 organic garlic clove, minced
1 tablespoon extra virgin olive oil

What you do: 

Boil hot water in pot for the pasta.
Saute onions, green peppers and garlic until browned.add rest of ingredients to the above sauteed and stir for about 5 minutes.
(This was my first veggie meal so i know, it's a bit amateur) but it's reallllly good. A little bit goes a long way!

SO HOW'D IT GO?

I actually really really love this recipe.  The simplicity is marvelous, and also makes it so very versatile.  I will never buy sauce from the store again.  I've substituted both carrots and celery for the green pepper and it's turned out great.  Can't wait to try some different combinations!
