Magic Grits

What you need: 

1 cup yellow grits (polenta)
3 cups water
1 veggie bullion cube
1 tsp liquid smoke
1 cup frozen corn kernels (or canned, or fresh)
1/4 Cup nutritional yeast
2-4 tablespoon vegan soy margarine
3 tablespoons maple syrup
salt and pepper to taste
Optional: paprika

What you do: 

1) Boil water and bullion cube (or stock); add grits. Adjust heat to simmer for 5 minutes, stir occasionally. 2) Turn off heat and add the rest of the ingredients (add corn while frozen or thawed, it doesn't matter) and stir well. 3) Let sit for 5-10 minutes to thicken and for the flavors to meld.
Great with tempeh bacon!

SO HOW'D IT GO?

I omitted the liquid smoke and the frozen corn because I don't have any. I also used agave nectar instead of maple syrup because that's what I had at home. I used the paprika (about 1/2 tsp).

This is great. Very yummy!
