Maggie's Veggie Chow Mein

What you need: 

1/2 cup chopped onion
1/2 cup shredded carrot
1/2 cup shredded parsnips
1 cup sliced mushrooms
1/2 cup shredded/ chopped cabbage
1/2 cup cut up broccoli or shredded broccoli stalk
1/2 cup green beans
1/2 cup bean sprouts (optional)
1 to2 tablespoons sugar
2 to 3 tablespoons soy sauce
1/2 to 1 teaspoon garlic powder
1/2 to 1 teaspoon ginger powder
3 tablespoons Vegeta (mixed veggie spice collection)
1/2 cup water
1/2 pound regular tofu, cut into cubes
1 package chow mein noodles

What you do: 

1) Take chow mien noodles and blanche in boiling water for 2 to 3 minutes. Drain, rinse, and set noodles aside.
2) In a nonstick skillet, stir fry veggies and tofu for about 5 to 8 minutes on high heat.
3) In a bowl, mix together the sugar, soy sauce, all spices and water to make the sauce. Once complete, add sauce and continue frying. After 2 to 3 minutes, add noodles and continue stir frying for 5 minutes.
Freeze so you have meals for the week or eat with friends!Enjoy :)

SO HOW'D IT GO?

Very good. Big hit with the guys tonight. Browned tofu separately with sesame seed oil. I used a bag of frozen stir fry veggies with my own sliced zucchini and onion. Easy fast and yummy.

my husband has made this several times and it is always delicious. he follows the recipe loosely-- I'm not sure exactly what changes he makes but we don't have the Vegeta spice mix so he improvises and I think also adds crushed red pepper.  We have it with these thin soba noodles from our asian market and a subset of the veggies.  YUM
