Luscious Coconut Bread

What you need: 

1 cup unsweetened coconut
2 cups unbleached flour
1 tablespoon baking powder
1/2 teaspoon salt
1 cup nondairy milk (I use soy)
1 1/2 teaspoons Ener-G Egg Replacer + 2 tablespoons water
2 tablespoons canola oil
2 tablespoons unsweetened applesauce
3/4 cup sugar
1 teaspoon vanilla

What you do: 

1. Preheat the oven to 350 degrees Fahrenheit. Toast the coconut in a dry skillet on medium heat until it begins to brown. Stir a few times, to brown evenly and prevent burning. Keep a close eye on the toasting coconut because it'll burn quickly after it begins to brown. Immediately remove from heat when it browns. Lightly grease a bread pan.
2. In a bowl, combine the dry ingredients, including toasted coconut. In a separate bowl, mix together the wet ingredients. Add wet ingredients to dry ingredients, and stir until blended.
3. Pour into prepared bread pan, and bake until a toothpick comes out clean and loaf is lightly browned (about 45 minutes). Remove from pan and cool on a wire rack.

SO HOW'D IT GO?

I'll just add my rave review to that of other people. Really good! I left out the salt, as I always do when baking, and since I didn't have any soy milk diluted about 1/4 c of rice milk to 1 1/4 c. I also didn't premix the egg sub out of laziness. I think I have to keep coconut out of my cupboard so I don't make this again, though!

Holy crap, this was good. I ate like half the load today and gave the rest away to my coworkers who raved about it as well. This is so effing good that I am never going to make it again. I literally COULD NOT stop eating. Gooooood stuff!@

ok so this the first bread i have ever made from scratch that came out PERFECT! When i took it out of the oven it just popped right out of the pan and once it cooled it was sssooooooooooooo delicous.

i added chocolate chips and let me tell you that is the perfect thing to do. and i put some shredded coconut on top 10 minutes before taking out of the oven. it was great.

this was excellent! I made two mini loaves for christmas dinner and the extra batter i turned into muffins. I used almost all coconut milk and just a bit of soy milk and it was so delicious. Toasting the coconut, IMO, made the bread incredible but I'm sure it would be fine without it. This recipe is definately a keeper  :)

Woo hoo!!  I have just made this and it really is yummy yummy!!  I am literally eating my first peice now (ok maybe my 2nd) & I really can't see it lasting much longer.
I waited until the festive period before making it as I wanted it to be a nice treat, and boy is it a nice treat!

My only changes were
      *I used sweetened applesauce - that's the only type I have ever heard of here in the UK
      *I didn't use and ener-G ass it's not the sort of thing that I ever buy - I just added a bit more apple sauce.

My first experience of cooking with applesauce and I am so impressed with it!

this bread = YUM!

I received two little loaves of this in my care package from baypuppy and Camillus (they used soynog and banana for the egg) and it was SO scrumptious.  Let's jut say...it didn't last long at all.

I topped one loaf with walnut bits just for the pretty picture, but then I realized that the walnuts really do add to the yummyness of this bread.  I'll bet this would be incredible with some chopped walnuts baked in with the bread.

Nice recipe, I will be making this one again. I didn't have any applesauce so I used apricot jam instead, which made it a little drier, but still good.

Amazing. I used sweetened coconut with the 3/4 c. of sugar. it was SO good!

Very yummy.  I fed it to guests and they were impressed!  I subbed water for the soy milk and used ground flax seed instead of Ener-G.
