Low Fat Pizza Dough

What you need: 

2 tablespoons minced prunes
1 1/2 teaspoons dry yeast
2 cups bread or all purpose flour
1/4 cup wheat or oat bran
3/4 teaspoon salt
3/4 cup water
1 tablespoon yellow cornmeal

What you do: 

1. Pour boiling water over prunes to rehydrate, then drain. Place ingredients in bread machine according to manufacturer's directions. Process on dough cycle.
2. Add more water as needed, 1 tablespoon at a time. Preheat oven to 450 degrees F. Remove dough from machine at end of cycle and divide in 2. Dust 2 baking sheets with cornmeal.
3. Roll each to 10" circles on floured board and place on prepared baking sheets. Bake 20 minutes or until browned.'

kneed by hand on floured surface....for bout 5  mins....its a good workout....then form  into ball, let rise

how do you make it if you don't have a bread machine?

Tried it with prunes and with apple sauce instead, definitely nicer with apple sauce.  Tastes a little too wholesome with the prunes. 

Made the mistake of using the pizza dough setting on my bread maker which only takes 45 minutes and it came out all sloppy, not sure why, definitely need to use the longer 2 hours 20 mins normal dough setting.   

Good recipe, tastes just like real pizza.
