Low fat, Gluten-free Apple & Sultana Slice

What you need: 

1 cup brown rice flour
1 teaspoon baking powder
1 cup rice milk or soymilk
1 cup sultanas
1/2 cup shredded dried coconut
1/2 cup brown suga and extra for sprinkling
1/2 cup chopped almonds
1 red or green apple

What you do: 

Pre-heat oven to 350 degrees Fahrenheit.
Sift flour with baking powder into a bowl.Add sultanas, coconut, sugar & nuts. Stir. Add rice milk or soymilk.Mix well. Spread into a 6 x 10 inch cake pan lined with baking paper (don't worry if your pan is slightly smaller or bigger).Arrange the apple in thin slices over the surface.Mix together 1 tablespoon of sugar plus the 1/4 teaspoon cinnamon and sprinkle over.Bake for 30-35 minutes or until cooked- a skewer poked in the centre will come out clean. Let cool before cutting.
Note: The slice will be a bit pale when cooked because of the brown rice flour.However you can also make this using wholemeal wheat or spelt flour but it won't be gluten-free.

SO HOW'D IT GO?

I was worried it wouldn't hold together, but this recipe turned out really well! I wanted to take something to work that was healthy to give my workmates, as this is my last week. Let me start by saying I made it like an upside-down cake like bar... thingy...  Ok this is what I did:
I added a tbsp of tapioca flour and 2 tsp of flax meal to the dry mix (excluding sugar), and then in the wet 1 used 1/2 cup maple syrup, 1 tsp vanilla, 1 tbsp of oil, and 1/2 cup almond milk.
I laid parchment paper down in my pan, then arranged peach slices and craisins that had been soaked in hot water for a few minutes. Over these I sprinkled some lemon zest mixed with sugar. After pouring the batter over, I cooked for about 25-30 minutes (I never *really* accurately watch the clock when I bake, I just go for what I feel is right).
Super yum! I hope they're impressed!
