A Little Healthier Chocolate Chip Cookie

What you need: 

1 cup unbleached white flour
2/3 cup rolled oats
1 tablespoon non aluminum baking powder
6 tablespoon soy margarine
2/3 cup sucanant
1/4 teaspoon salt (optional)
1/3 cup flaked, unsweetened coconut (optional)
3/4 cup (or to taste) Sunspire Organic chocolate chips
1/3 cup soy milk

What you do: 

Mix together dry ingredients except chocolate chips. Add melted soy margarine and soy milk. Stir briefly, add chocolate chips and mix until blended.
Bake in preheated 350 degree oven about 12.

SO HOW'D IT GO?

Used coconut oil instead of margarine (simply because I didn't have any margarine). Soooooo good! This recipe was great. batter was slightly dry so added a bit more milk. Highly recommend.

Dough isn't quite sweet enough for me. I used almost 3/4c rapadura sugar. Next time I think I'll try half a banana and 1/3c rapadura. Cookie itself didnt quite hit the spot, but its a very nice, versatile recipe that can easily be twisted to whatever is appealing to your palate.

I used only 4T butter, 1/2 c. chocolate chips, dash of cinnamon,whole wheat flour, and almond milk. It tasted good. It wasn't as sweet as most of the store bought chocolate chip cookies I've gotten in the past, but I didn't want them to be that sweet. I think this is a good recipe and it can be easily modified to fit your taste and mood. I'm definitely keeping this in my list.

Oh, I also used whole wheat flour (not white).

My mods:

+ 1/2 banana
only 1/3 C. sugar (turbinado)
only 4 Tbsp. margarine
only 1 tsp. BP
+ 1/2 tsp. ginger
+ 1 tsp. cinnamon
used salt but not coconut
used grain-sweetened choc. chips from my co-op

tasted pretty good!  banana added a nice, subtle sweetness, and I added just enough sugar to make it taste cookie-like.

I make this recipe often and I only use 1 tsp baking powder, so I wonder if that's what the author meant. Anyway, this is one of my favorites and everyone raves over it. I usually use a dark vegan chocolate.  :)>>>
