Linda's Yams and Apples

What you need: 

8 large (about 4 lbs) yams
4 large (about 2 pounds) granny smith apples (or other tart apple)
3/4 cup packed brown sugar
6 oz frozen orange juice concentrate
1/3 cup maple sugar
1/2 cup vegan margarine
1 tablespoon grated orange peel (fresh or dried)

What you do: 

Preheat oven to 375 degrees.
Boil, peel and cut the yams into 1/4 inch think rounds.
Peel, half, core, and slice the apples into 1/4 inch crescents.
Lightly grease a 9x13x2" pan & layer the yams & apples, alternating & overlapping the yams and apples.
Stir sugar & margarine in small saucepan over medium heat until butter melts. Add the remaining ingredients (orange peel, frozen orange juice, maple syrup). Bring to a boil until smooth. Pour over yams & apples.
Bake 40 minutes, or until tender & lightly glazed.
Notes: Can make ahead (bake & cover) then refrigerate & reheat.
Can be made using (2) 28 oz. cans of yams and 8 medium apples.
