Lentil Loaf

What you need: 

2 cups of thickly stewed lentils
1/3 cup minced onion
2 slivers of garlic minced
1/2 cup chopped cilantro
1/3 cup chopped celery leafs
1 red or green pepper diced
1 cup chopped nuts of your choice (I use almonds)
1/4 cup marinera sauce
1 cup bread crumbs
1 cup shredded soy mozzarella cheese

What you do: 

Mix all the ingredient and place in a meat loaf pan and bake at 375 for 45 mint or till a knife place in center comes out clean, serve with brown gravy.

how coarse should the breadcrumbs be? does it matter?

Yummy dish!  I also left out the soy cheese and I added pecans instead of almonds for the nuts.  I didn't have to add extra spices because the breadcrumbs I used were already Italian flavored.  This made a great sandwich the next day, yum!

I made this twice. The first time i made it i thought it was terrible-but had potential. So i tried again... Today i made it and added lots of spices like cayenne, dill, ... It was really really good.  Both times i skipped the soy cheese and put BBQ sauce on top. yum!

Very tasty. I replaced the breadcrumbs with rolled oats---I stuck them in the food processor and ground them into crumbs. I left out the cheese and the celery leaves, and used tomato puree instead of marinara sauce (the only marinara in the house had meat in it). I also used whole sunflower seeds in place of the chopped almonds. Yummy.

I think this recipe would make pretty good veggie burgers/lentil patties, too. The mixture is dry and easy to handle.

mmmmmmmmm!!!!

i made quite a few changes but the end result was soo delicious!

i left out the celery leafs because i didnt have any. i used walnuts, because i did have those. i left out the bread crumbs and used 1 cup of cooked brown rice instead. i left out the soy mozzarella but added a good sprinkling of nutritional yeast.
i added salt, pepper, thyme, parsley, tamari, some quick-cooking oats, and carrots. it all cooked together nicely but fell apart when i put it on my plate. that made no difference though. it was delicious!!

i also took the other commenter's suggestion about making millet mashed potatoes, something i had never heard of. i am truly impressed. i never knew millet would get this kind of consistency! i added salt, pepper, and garlic powder to make it tasty and it really seems like im eating mashed potatoes.

the best part was this amazing gravy recipe that i got from the chicago diner cookbook. mmm. perfect mix. thanks for a good dinner.
