Lentil Leek Soup

What you need: 

1 cup dry lentils, washe'd and sorted
3 leeks, washe'd carefully and chopped
1 carrot, chopped finely
1 tablespoon vegetable broth mix
6 cups water (or 6 cups vegetable broth)
3 bay leaves

What you do: 

Place lentils and water or stock into a large heavy pan. Bring to a boil, then reduce heat to low, cover and cook for 30 minutes. Then add the rest of the ingredients, bring to a boil again, reduce heat and simmer for 15 minutes. Serve!
