Lemony Greek Potatoes

What you need: 

1/4 cup olive oil
1/4 cup lemon juice
1/2 teaspoon lemon zest, optional
1/2 cup water
1-2 teaspoons oregano
salt, to taste
2-4 gloves garlic, crushed
6-8 potatoes, peeled and halved or quartered

What you do: 

1. Preheat oven to 350 degrees F. Combine oil, lemon juice, zest, water, oregano, salt, and garlic in shallow baking dish.
2. Put potatoes in dish and turn to coat with oil mixture.
3. Bake for 1 1/4 to 1 1/2 hours, until all the liquid is absorbed and the potatoes are browned.

What does "1/4 lemon juice" mean? 1/4 cup, 1/4 lemon or 1/4 teaspoon?

I just made these....and they were amazing!! My boyfriend and my butter loving mom loved them!! I was a little disappointed mine didn't brown, but the taste made up for it. I followed the recipe but then added pepper, onions, and dill. I think the dill was a good touch. This will forever be a staple in my home!!

;)b Made this for Easter dinner with a Greek Salad and the marvelous Moussaka.  The BF actually liked these better than the ones in his favorite Greek restaurant!  Its a keeper

These are FANTASTIC!  I added chickpeas and onion as per some other reviewers suggestions, and added rosemary.  While these were great like that, next time I will add a bit more lemon juice and a bit less oil. I served it with some steamed brussel sprouts, but as well as everything went together, I will probably just throw everything in the pan to bake together next time.  This is certainly a keeper! ;)b

I thought they were a bit too oily, so next time ill cut down on that, but otherwise amazing  :D

I was having trouble with my roasted potatoes and felt like they just werent as good as other peoples and then I found this recipe. The secret must be baking them in a dish rather than on a baking sheet. If your using fresh lemon juice I recommend using two lemons as I wanted my potatoes a little more lemony, but really this is an amazing recipe!

I added the chickpeas per the suggestion of Julls (archived comment) and it was very tasty!! Great recipe. I might add extra lemon and garlic, but that's just for my own taste. If your oven isn't browning fast enough, add an extra 25 degrees about halfway through. :)

What kind of potatoes?  I'm trying red potatoies...
