Lemon Tea Cookies

What you need: 

Cookies:
3 tablespoons water
1 tablespoon flax seeds
1/2 cup nondairy milk
2 teaspoons lemon juice
1 3/4 cups flour
1 teaspoon baking powder
1/4 teaspoon baking soda
1/4 teaspoon salt
1/2 cup nondairy margarine
3/4 cup sugar, to preference
1 teaspoon grated lemon rind Lemon Glaze:
3/4 cup sugar
1/4 cup lemon juice

What you do: 

1. Preheat oven to 350 degrees F. For flax mixture: In a cup, stir together water and flax seeds; set aside. For buttermilk: In another cup, stir together nondairy milk and lemon juice; set aside.
2. In a bowl, combine flour, baking powder, baking soda, and salt. In a separate bowl, beat nondairy margarine for 30 seconds, then add sugar and beat until fluffy.
3. Add flax mixture and lemon rind; beat well. Alternate stirring the dry ingredients and soured milk into the wet ingredients.
4. Drop from a teaspoon onto an ungreased cookie sheet. Bake for 12 to 14 minutes. Remove at once onto a wire rack. While baking, mix together the lemon glaze to be brushed on the cookies while cooling.

I surprised my daughter with a tea party one day and made these- we both loved them!

I'm not a huge cookie fan, but these are GREAT!!!  I had limes on hand, but no lemons, so I subbed lime juice.  I am a little stuffy right now and can't taste very well, so I added A LOT more juice than called for.  I also added about a capful of almond extract.  The taste and consistency of these cookies is really great!

can i use smth else instead of butter/margarine? in my place there is no such thing like vegan butter/margarine;/

Hi,
You could try using a really neutral oil, like peanut or canola, but I think you'll see a texture difference.  I live in the north eastern USA.  I'm lucky enought o have many good veg friendly stors here, but I do know that fleischmans makes a vegan oleo, and Willow Run, by Shedd is also vegan.. Good luck!

yes, an oil will work. however you'll want to decrease the amount of oil you use in place of margarine a bit. this webpage has good info on subbing different things: http://www.theppk.com/veganbaking.html

you see,in my country i can buy margarine or butter only in huge cities and by net-it costs too much, so i try to use oil but not always it is good. i will try make this cookies with oil and we will see : P

Ok so I finally got around to making these. They are so yummy! I don't think I did the lemon rind thing right. I tried to create my own and I think I messed up LOL. Any tips for the future regarding lemon rinding?  :D

Create your own lemon rind?
If you have a lemon, I recommend using a fine grater, or even better a microplane! You can buy them at most cooking stores; I really didn't think it would be useful, but it makes zesting so much easier!

I've made them twice now, and I love them.
I think I ended up using more flour than the recipe calls for, but it came out great anyway.

They were so yummy!! They were eaten as soon as they where out of the oven.
I used applesauce instead of flaxseeds, and whole wheat flour. So good.
