Lazy Man's Rice Pilaf

What you need: 

3/4 cup leftover rice
10 to 20 raw chopped almonds
2 tablespoons oil
1/4 teaspoon sweetener of choice
Squirt lemon or lime juice
2 mint leaves
Pinch rosemary, to taste

What you do: 

1) In a medium-sized bowl, warm up the cooked rice with all other ingredients listed in a microwave.
Feel free to vary it up any way you like. I also assume that cooked quinoa/wheat berries/millet would taste fine in this dish as well, although I wouldn't be so sure about amaranth myself.
Source of recipe: Just a little something I whipped up that's satisfying and very quick.
