Lazy Day Mexican Stir Fry

What you need: 

any veggies: carrots, celery, tomato, peppers (any color), asparagus, green beans, zucchini, corn, onion, broccoli, cauliflower, peas, or anything else that might be close to going bad in your fridge. (if your feeling super lazy, you could just use a bag or two of mixed frozen veggies)
tofu (optional)
a little olive oil
brown rice
Mexican hot sauce

What you do: 

Throw on how ever much rice you want (depending on how hungry you are or depending on the amount of leftovers you want). While it cooks, pour the olive oil over medium heat. Grill up all the veggies/tofu. When the rice is done, dump it in with the veggies/tofu. Heat and stir for about 10 minutes. Serve on a plate or in a bowl. Mix in Mexican hot sauce (depending on taste).
I've found that if you mix in the hot sauce while its cooking it gets kind of dried out after being in the fridge.
