1 red bell pepper
lettuce to taste
1 ripe tomato
celery to taste
1/2 an onion (optional)
1 head of broccoli
2 spoons olive oil
1/2 teaspoon sugar
the juice of 1 lemon
fresh mint leaves (about 6)
1 Boil the broccoli until it's cooked but not too cooked! Let it cool a side while you prepare the rest of the ingredients.
2 Peel and cut the carrot in small slices, slice the tomato, pepper, lettuce, celery and onion as well. Everything should be clean.
3 To prepare the marinade, mix the oil, sugar, lemon juice and chopped mint.
4 Mix in a salad bowl the vegetables and the marinade. Refrigerate for about 10 minutes, mixing every now and then so all the ingredients get soaked in the marinade.
5 Serve cool and enjoy. Delicious!
