2 fresh beets, peeled and chopped bite sized
olive oil, as needed
sea salt and pepper, to taste
1. Preheat oven to 350 degrees F. Line baking sheet with parchment paper. Put beets on prepared baking sheet.
2. Lightly coat beets with olive oil, and mix with hands to coat all the pieces. Sprinkle with sea salt and pepper.
3. Bake for 30 minutes; check half way through to mix.
Enjoy! These are really good as leftovers too. I recently joined a CSA and have never cooked beets, or eaten beets that I can remember. So, after trying a few recipes that didn't really 'wow' me, I tried this since it works great for other veggies. It really brings out the great natural flavor in a mellow way.
