Kick-Ass Molasses Cookies

What you need: 

1 cup packed brown sugar
3/4 cup canola oil
1/4 cup molasses
3 tablespoons Ener-G egg replacer
2 1/4 cups unbleached all purpose flour
2 teaspoons baking soda
1 teaspoon ground cinnamon
1 teaspoon ground ginger
1/2 teaspoon ground cloves
1/4 teaspoon salt
3 tablespoons sugar

What you do: 

1. Heat oven to 325 degrees F. Mix brown sugar, oil, molasses, and egg substitute in a large bowl with an electric mixer on medium. You can also mix with a spoon, but it's better when it's really whipped up.
2. Stir in the rest of the ingredients except the vegan sugar. Make tablespoon sized balls of dough and roll in the sugar.
3. Place cookies 1-2" apart on ungreased sheet.
4. Bake for 13 to 16 minutes or until set (appears dry). Let cool for 1 to 2 minutes and place on wire rack or a plate is fine as well.

these cookies are FABULOUS. so soft and just absolutely delicious. i made them right before a camping trip to feed to my non-vegan friends and they disappeared in a night. :) i used applesauce instead of egg replacer as others have suggested, 2 tbsp for each egg i think is what i did. anyway they turned out great i'll be making these again.

I used 3 Tbs of flax meal and had to add about 1/4 Cup of water to get them moist enough to roll into balls.

these were SO GOOD! DELICIOUS! MY HOUSEMATES ARE EATING ALL OF THEM RIGHT NOW!!!

Yeah!  :D  Awesome cookies!!!
I used approx. 2 1/2 T ground flax/ 7 T water: perfect. 
Next time I'll try applesauce and Double the recipe  ;D

Great recipe... altered it a bit for used applesauce.. wasn't easily able to roll into balls so scooped out balls onto stone and let bake.  Daughter was LOVING them... next batch I'll try to add a bit more flour so that it easily forms into the ball.. but I have to say went well for first batch of vegan cookies...

Oh, I should say that the 1/4 cup of applesauce was for 1/2 of the recipe, not the recipe as stated (I didn't need 2 dozen cookies). :P

Delicious!  I used 1/4 cup of unsweetened applesauce instead of the egg replacer and they turned out perfectly. :D

Best molasses cookies I've had in a long, long time. ;D

THIS RECIPE IS AMAZING!!

The first three people who tried them sighed in happiness and rolled our eyes with a big ol' smile on our faces the second we took a bite, lol. I used 1/3 cup applesauce equal to one egg instead of Ener-G (for no other reason than I lost my box of Ener-G ... bad thing for a vegan to do, lol) and it worked AMAZING.

I'd recommend this recipe to EVERYBODY IN THE WORLD! Everybody at the party I made these for loved them and a couple people wanted the recipe. Thank you thank you thank you!  :)

When I made these the first time I screwed up and added too much baking soda. I added more molasses, flour and spices to try and balance out the baking soda taste. The end result was very nice. I also used fresh ginger, which tasted great. However, the second time I followed the directions (except for subbing half the oil for applesauce) and they were way too wet. I added over 2 cups of flour to get them dry enough to roll into balls. I will make these again, but I will definitely cut down the wet ingredients. Eat these the same day you make them if you like a little crispyness. They are completely soft the next day.

This is the BEST cookie ever. I followed the recipe but used fresh ginger instead of ground, about 2 tsp of it, and they added a little juice to the cookie. Also, for decoration I added a spicy thai peanut sauce that was thick, and polished it off with a date or raisins on top...MMM! Merci!

HELP!
I've made this recipe 4 times now.  The first 2 times they were fabulous - the 3rd time they were really fluffy, still good, but not as satisfying as the first 2 batches.  Now... i am on my 4th batch as I type and they are turning out fluffy too! 

Where did I go wrong???  Could it be too much water added to the egg replacer??
