Kale Salad

What you need: 

1/4 cup nut butter (I like almond butter)
1/4 cup vegan mayonnaise (I use Vegenaise)
2 tablespoons soy sauce
1/2 teaspoon sesame oil
1-2 tablespoons rice vinegar
2 teaspoons minced ginger
1 bunch kale, stems removed and chopped
1/2 cup carrots, shredded
1/2 cup red pepper, diced
1/2 cup scallions, chopped
1/4 cup toasted sesame seeds
1/2 cup toasted almonds
1 cup baked tofu or fried tempeh, diced

What you do: 

1. Whisk together nut butter, vegan mayo, soy sauce, sesame oil, rice vinegar, ginger, and enough water to make a thin dressing.
2. Toss veggies, nuts, and tofu/tempeh in a bowl, pour dressing over, and serve.
This recipe is very versatile and you can include any veggies or nuts/seeds that you enjoy!

<3 <3 <3 I HIGHLY recommend adding 1/2 a container of fresh raspberries to the dressing in this recipe! And possibly a tsp. or two of agave. Also, if pan frying tempeh, add 1-2 Tbsp. of the dressing after the pieces have browned a bit; it gives it a nice crunch!

My boyfriend lost it over this recipe, he literally cant get enough kale nowadays :D Thanks so much for sharing! We are already making it all the time


This is my new favorite salad.  SO good.  I left out the tofu and almonds, and I was generous with the other veggies.  The dressing made a bit more than I needed to toss the salad with but it will be great on another salad!  I decided to massage the chopped kale with a little bit of salt before I added everything else to soften it up a bit.  I will definitely make this again, hopefully with some baked tofu next time!

This was great! I cooked everything(we already had a salad), added the dressing, and chilled. We ate it cold, and everyone loved it. I'm giving the recipe to my mom--which is a high compliment!


This salad was fabulous :)>>>. I loved it . I am not a big fan of kale I used pine nuts peanut butter and olive oil . I ate a whole bowl full by it self and then had it over mashed potatoes awesome. Thank you


this dressing was awesome!  i changed up the veggies a little, but the kale + dressing was great!  i used a pretty crappy peanut butter, but i bet with a really good tasting nut butter, it would be even better.


I took this to a potluck and it was devoured.  I used two bunches of kale and steamed them first.  I used tempeh, not tofu.  the dressing didn't sound good to me (I hate mayo, even vegan mayo), so I used the peanut sauce recipe from Cabbage Rolls With Peanut Sauce in the Appetizers category on this website.  YUM YUM YUM!!!
