Kale with Pasta and Morrocan Lemons

What you need: 

1 bunch kale, roughly chopped
2 cups whole wheat or Kamut pasta (penne or rotini are good)
1 tablespoon olive oil
2-3 pieces Moroccan lemon, minced fine
1 teaspoon dried oregano or 2 tablespoons fresh
fresh pepper, to taste

What you do: 

1. Put on large pot of water to boil. Cook pasta according to package directions, until nearly done.
2. Add kale to the pot for the last 2-3 minutes. Drain pasta and kale into a colander, and add the oil and diced lemon to the pot.
3. Toss the pasta and kale in the pot, add oregano and top with fresh pepper.
Delicious and easy. This is also great with roasted garlic if you don't have morrocan lemons hanging around your house!
