K-Chick Loaf

What you need: 

1 can chick peas/garbanzo beans
1 can kidney beans
1 small onion
2-3 cloves of garlic (or more if desired)
5-6 small-medium sized carrots
1 cup bread crumbs (I used fresh whole wheat)
1/2 cup dry unsalted cashews
1-2 tablespoon olive oil
cumin seeds, basil, rosemary, cinnamon, salt, pepper
spices: a teaspoon or more (to taste)

What you do: 

Preheat oven to 375 degrees.
Boil carrots for approximately 10 minutes, drain, and mash.
Saute onion in olive oil on medium low heat until softened.
Add garlic and spices and heat another few minutes.
Food process cashews until grainy in texture. Food process bread if making crumbs fresh.
Mash beans, add cashew crumbs, and bread crumbs in large bowl.
Once all veggies are done, add to bowl and mix/mash very well until combined and sticky in consistency.
Pack mixture into an oiled bread pan and bake for approximately 1 hour (times may vary).
Let cool slightly before turning out, cutting, and serving.
**Well worth the effort and spices can be adjusted/changed as necessary. Enjoy!

SO HOW'D IT GO?

Very good, I also used the food processor on most and also I soaked the cashews first. The second time I made it I added mushrooms (puréed). I sautéed the cashews with the onions and garlic. Delicious!

this was 'ok' but for me nothing like a meatloaf. It had the wrong texture and taste.

I was looking for a really high fibre dinner and I am very happy I came across this. I have never tried a vegan un-meat loaf - but this was really good :) I didn't add in the cinnamon, because I don't particularly care for cinnamon - but I added extra sage. Also used ground cumin instead of cumin seeds/ I served (more like doused) this with mushroom gravy (recipe from the veganomicon) and green beans sauteed in garlic. This ca came out moist, but it was a little too moist on the bottom, but it wasn't really a problem. I am looking forward to making this again  ;)b

We really enjoyed this, however it didn't firm up like I had hoped.  I baked it for the full hour, but it could have used some extra time.  I also didn't measure my breadcrumbs, so I may have not used enough.  Also, I pureed the onion in the food processor which added to the moisture - next time I won't do that.  But the flavor was delicious, though I may omit the cinnamon next time.  Served with ketchup and mashed cauliflower.  Definitely a keeper for fall and winter!

This was pretty good. The texture was better when the loaf cooled more. All in all it reminded me of a falafel, but if you like falafel....

Yum! i made this for dinner tonight and it was really good! My mother enjoyed it as well, however my father just looked at it and pushed it aside. He doesnt know what he was missing!  ;)b

completely forgot about this recipe!  i made this for myself for thanksgiving last year (everyone else in my family is omni and scared to stray far from tradition), and it was pretty good.  ;)b  no one wanted to try even a nibble, so i got it all to myself.  ::)  however, they absolutely loved the green bean casserole from this site and said it was better than the "real stuff".

anyway...
mine turned out a little dry (if i remember right), but it was perfectly fine with some ketchup.  should've made some veg. gravy.  next time.  :)

This was pretty good... I might leave out rosemary next time though i didn't really like that flavor... I topped my loaf with ketchup... 4 stars

This is really good!  K-Chick Loaf was my first attempt at a "meeeetloaf"  and I wasn't sure how it would turn out.  After baking an hour it came out of the oven looking a little dry but was very moist and tasty, very good texture.  It held together nicely too.  I used cracker crumbs and rolled oats instead of the breadcrumbs, sauteed some green bell pepper with the onions, and added a spoonful of tomato paste with the mashed carrots, since I had all that on hand.  I may add more of the herbs/spices next time, they were a good combo but a little subtle (I put in about a half teaspoon each, but just a dash of the cinnamon since it tends to overpower easily).  Thank you for sharing this very satisfying recipe, I can't wait for leftovers tomorrow!

I was craving an un-meatloaf type meal & decided to give this a go. It did not disappoint. I followed the recipe exactly....well maybe a little extra ground cashews  ;) & I used 1 tsp for each spice. Personally, I think that 1 tsp. of cumin seed was a little too much & next time, I will cut back on it. It tasted really good with mushroom gravy.
I served this with garlic mashed potatoes & buttercup squash & now I am pleasantly stuffed  :)
