JustOneMorePlease Oatmeal-Chocochip Cookies

What you need: 

1 cup (2 sticks) margarine, softened (I use Earth Balance buttery sticks)
1 cup sugar (I use vegan raw/turbinado sugar or a mix with brown sugar)
2 'eggs' (I use 3 teaspoons Ener-G Egg Replacer + 4 tablespoons warm water)
2 tablespoons soymilk
2 teaspoons vanilla
1 3/4 cups flour
1 1/2 teaspoons baking soda
1/4 teaspoon salt (basically a pinch)
2 1/2 cups oats
1 bag chocolate chips (I use Tropical source)
1 cup chopped nuts (optional)

What you do: 

These are my favorite cookies - not too sweet since I prefer to have the chocolate chips be the sweetest part of the cookie. And that means you may have just one more.
Preheat oven to 375 degrees Fahrenheit.
Beat margarine and sugars until creamy.
Add eggs, milk, vanilla – beat.
Stir in combined flour, soda, salt.
Stir in oats, chocolate and nuts.
Roll into 1 inch balls.
Bake on ungreased cookie sheets – about 12 minutes (check and turn the tray after 10 minutes).
Bar alternative: press dough into the bottom of an ungreased 13x9 inch baking pan and bake 30-35 minutes.
