Just Like Granny B's Sugar Cookies

What you need: 

1/2 cup margarine
1/2 cup sugar
3 tablespoons extra firm silken tofu (I use MoriNu), mashed or pureed
1 teaspoon vanilla
1 1/4 cups flour
1 teaspoon baking powder
1/4 teaspoon salt

What you do: 

1. Preheat oven to 350 degrees F. Cream margarine and sugar for about 5 minutes until fluffy. Add mashed tofu and vanilla. Mix well.
2. Sift the flour, baking powder and salt into the mixture.
3. You can either roll out the dough and use cookie cutters, or make cookie dough balls and flatten the dough with your hand onto an ungreased cookie sheet. You want the dough to be almost the thickness you want your cookie because these don't spread much.
4. Bake for around 10 minutes.
You might need to adjust the flour a bit if the dough feels too wet. These cookies aren't super sweet. If you like them that way, or if you aren't frosting them, you might want to add 2 more tablespoons sugar. These are really unhealthy, but super yummy and soft.'

SO HOW'D IT GO?

This is the best vegan sugar cookie recipe I've come across! If you're going to roll the dough out and use cookie cutters, I'd recommend refrigerating it first. It's not necessary, but it makes the job a little easier. I made mine in the shape of Totoro and use this icing recipe to decorate them:
1 cup confectioners' sugar
2 teaspoons almond milk
2 teaspoons light corn syrup
1/4 teaspoon almond extract
Assorted food coloring
Just mix it all together and voilà!

i made this this morning. i altered it just a bit.
- 1/4c coconut milk + 1/4c applesauce instead of margarine
- 1/2-2/3c of wheat flour + 1/2c oatmeal + 1/4c bran instead of just flour
- almond extract instead of vanilla

the sweetness was just perfect! enough to satisfy my sweet tooth! thank you so much for sharing this! i wanted to make my own cookies cuz i bought vegan cookies yesterday for $4! and i thought i could make something cheaper since i had most of the ingredients. thank you again!!!  :D ;)b ^-^

These are super yummy.   Somehow mine were too dry so I added about a 1/2 cup of rice milk to the recipe.

yum! My meatatarian dad liked em and my vegetarian mom! I cant tell the difference between our christmas cookie recipe and these! The only thing I noticed is the difference in texture, but I dont care I inhaled them. Thanks!

I made these for my vegan boyfriend who is trying to "eat more healthy." Let's just say that he is so mad at me now. He cannot help but eat them. My non-vegan parents and friends all love them as well. The first time I made the batter too moist the second time it was a little too try. I am going to try again and hopefully they will be perfect. I made mine halloween cookies and threw together some delicious icing that makes these not-so-sweet cookies just sweet enough. Thanks for sharing. I will continue to make these.

very ingenious, so simple and so delicious

this was the first time i made a vegan cookies and they were better than any non-vegan cookie ive baked, and people LOVE my baking
i was a little effy about the tofu since ive never tasted it but quickly changed my mind when i tasted the batter
plus my fiance absolutely loved them as well which is most definately saying something since he is the pickiest eater in the WORLD!
not to mention we are both meat eaters, but since my doc said i need to eat healthier, i figured i start with something that ive already tried....

I am probably the only one who had trouble with these cookies.

Silly me, was out of Mori Nu Tofu, so I substituted with a smashed banana. The cookie dough turned out super buttery and not-okay-looking. After adding more flour the dough started to appear acceptable but the sugar cookie taste was no longer evident and I ended up tossing this creation. =/

Take that as a lesson learned, do not substitute Mori Nu Tofu for a whole smashed banana lol XD

First vegan sugar cookies! I followed the recipe how it says, but sectioned it off into 3 balls, and dyed each (red, yellow, blue). Then i stuck them in the freezer for like 10 minutes to firm it up a bit, rolled it all together and made tri-colored cookies.
Very good! Totally impressed a band thats afraid of vegan food! The devoured a tray of them
