Julies Broccoli with Garlic Sauce

What you need:

5 cups water, divided
1 1/2 cups uncooked white rice
1 vegetable stock cube
1 head garlic, minced
1/8 to 1/4 cup soy sauce
1 teaspoon powdered ginger
1 teaspoon to 1 tablespoon red pepper flakes
1/4 cup sweetener
3 medium heads broccoli, chopped to bite sized pieces
1 tablespoon cornstarch + 2 tablespoons cold water

What you do:

1. First boil 3 cups water for the rice. Add rice, cover and reduce to a simmer until done, according to package directions. Boil 2 cups water and add the vegetable stock cube.
2. Stir to dissolve, and add the garlic, soy sauce, ginger, red pepper flakes and sweetener. Cook the broccoli over high heat in a large skillet for 2 minutes.
3. Add the garlic mixture. Let this simmer over medium high heat for 7-10 minutes depending on how crisp you like your broccoli.
4. Add the cornstarch mixture and stir to distribute it. Cook for 1-2 minutes more or until it thickens. If you like, you can dissolve more cornstarch in cold water to make it even thicker.
5. Place rice in bowls and top with broccoli and garlic sauce mixture.
Enjoy!

I had a big craving for eggplant with garlic sauce tonight.  The sauce recipe was delicious!  I didn't change a thing other than to cook a large peeled and chopped eggplant in a few tablespoons of oil for about 10 minutes prior to adding the sauce.  Great recipe! Thanks!

This was pretty good....I added some onions and carrots, but I wish I hadn't steamed my broccoli before adding it to the pot.  I prefer my broccoli a little crisp....and I should have added more garlic.  I didn't add the whole head because I got tired of messing with it, figuring 7 cloves would be sufficient....not so.
Still, very good.

We are garlic fiends, my husband actually wanted to put garlic sauce on his cereal this morning, so I thought this recipe would be perfect for us...and it was!
I did it with a full mixed vege stirfry , used 2 tablespoons brown sugar and no chilli because we were eating with the parents who "don't do" spicy food :(
I didn't get it to thicken, but also didn't try too hard because it looked so good with lots of sauce to soak into the rice :)  Might try more cornstarch next time though, just to see the difference.
Great recipe, going to become a staple in our house, I can tell :-D

Super yummy. I added snow peas, carrots and used brown rice, no ginger. Very easy to make.  I halved the sweetner and used xylitol.
I want to add cashews next time...and there will be a next time. Thanks!

I can't even put into words how much I love this sauce :)>>> Today I had it with a little peanut butter stirred in instead of the cornstarch.  Freaking amazing :>

this was really simple & tasty.  i halved the sweetener like other suggested and it was sweet enough without it being overpowering.  i also added some asparagus, baby corn, orange peppers, baby bella mushrooms, along with the broccoli stems.  i peeled the rough fibrous outside of the stems and diced up the inside, it was really tender and good.  i won't throw stems away anymore!

oh - and i added some chopped cashews on top.

We really loved this recipe. I put in a shake or two of the crushed red peppers and it made it really spicy, but it was good. I also used whole-wheat flour instead of cornstarch, and it turned out great! I have tons of cauliflower in my freezer so I threw in a bit of that and the sauce made it really yummy. Thanks for the awesome recipe! ;)b
