Jiaozi Dumplings

What you need: 

4 ounces ground beef style seitan, crumbled
1/3 cup napa cabbage, finely chopped
1/4 cup green onion, sliced
1/4 cup fresh shiitake mushrooms, finely diced
1 tablespoon ginger, minced
1/8 cup water chestnuts, chopped
1/2 teaspoon salt
3/4 (16 ounce) package wonton wrappers
water, to close wontons
dumpling sauce, to serve

What you do: 

1. Brown seitan in skillet (or according to package instructions). In a large pot, boil water. Combine the remaining ingredients (up to wonton wrappers) in a bowl for filling.
2. Fill the wonton wrappers with 1 teaspoon filling. Using your fingers, wet the wonton wrapper along the edges. Fold wonton and pinch to close.
3. Place 7-8 dumplings in the boiling water and boil for about 3-5 minutes.

SO HOW'D IT GO?

I used TVP instead of the seitan.

I tried boiling them but it turned out poorly so I fried them instead.
