Jessica's Vegan Casserole
1 tub vegan sour cream (Tofutti Sour Cream)
1 packet vegan onion soup mix
1 small bag frozen broccoli (or you can do fresh)
1 bag vegan chicken or steak strips
1/2 cup vegetable broth
bread crumbs or French fried onions
Preheat oven to 350 F. In a small casserole dish, empty the tub of sour cream. Add onion mix and veggie broth. Mix until completely combined. Add steak or chicken substitute and vegetables and stir until coated. Top with bread crumbs or French friend onions. Bake for 20 minutes.
**I am not sure if the French fried onions are vegan, or if you can get a vegan variety of them. You can also use a bag of mixed veggies rather than broccoli.**
