Jenny's Famous Chocolate Chip, Oatmeal, Coconut, Walnut Cookies
1 cup margarine
3/4 cup brown sugar
3/4 cup sugar
2 egg replacers (I use Ener-G Egg Replacer)
1 teaspoon vanilla
2 1/4 cups flour
1 teaspoon baking soda
1/2 teaspoon salt
1/8 teaspoon baking powder
1 cup chocolate chips
1/4 or 1/2 cup (to taste) oatmeal
1/4 to 1/2 cup (to taste) coconut, shredded
1/4 to 1/2 cup( to taste) walnuts, chopped
1. Preheat oven to 375 degrees F. Cream together first 5 ingredients (through vanilla). Mix together the flour, salt, baking soda and baking powder.
2. Add flour mixture to the creamed mixture. Then stir in the chocolate chips, oatmeal, coconut, and walnuts.
3. Drop by tabelspoon onto an ungreased cookie sheet and bake for 9 minutes then turn sheet and bake for another 4 minutes.
4. Cool well before removing from cookie sheet.

omg! these were awesome. a little too crunchy on the outside but im not much of a baker so it was probably something i did. these are so delish! highly recommend these! ;)b
delicious. i used 1 banana and 3.5 Tbs applesauce for the egg replacer as someone else mentioned and subbed raisans for chocolate chips since I didn't have any. crispy and moist. yum.
I just made these cookies to take to friends for dessert tomorrow. It was all I could do to keep from eating them all. Glad to say I was able to stop at three. This is a keeper. I used half ww pastry flour and half spelt flour. yummo....
these are a permanant addition to my cookbook- I'd say I've made them twice in the past month alone! my omni family is in awe of the fact that they're vegan- so soft, and delicious, totally not healthy tasting, lol- yum! ;D
these cookies were amazing...my house full of non-vegan room mates finished them off in a few hours. I replaced some of the butter with applesauce, so they came out a little bit more cake-like, but they were still delicious. I'll definitely make them again.

These are by far the best cookies on this website. My only complain is that they were so good that my kids (and their non-vegan friends) ate them all before I could take a pic of them.The cookie dough was awesome. I'm sure I'll be gaining a couple pounds thanks to this decadent beauties but I don't give a damn. They are perfect with soy milk or coffee.

I put a little more coconut than is suggested because I really love coconut.

i used half whole wheat and half unbleached all purpose white flour and just added chocolate chips to make chocolate chip cookies instead.. also decreased temp. to 350 and baked for 9 minutes. very good!
