Jalapeno Rice

What you need:

1 and 1/2 cups of white rice
1 medium green bell pepper
1 bundle of green onions
1/2 large onion
1/2 cup jalapeno slices
4 packets of vegetarian brown gravy
salt and pepper
Cajun spices

What you do:

Start your pot of rice first, since this will take the longest to cook. Follow the directions on the rice you choose.
Cut up your green onions about the size of 3 quarters stacked together. Repeat this for your green bell pepper and your onion.
Add the green onion slices, bell pepper slices, and onion slices to a frying pan with some olive oil. Fry until they have a nice golden color. Add your seasonings here. I use salt, pepper, and some Cajun seasonings. (You can also add your jalapeno slices in this mix but I prefer to add them right outta the jar so the flavor doesn't get cooked out.)
In a separate pan, make your vegetarian gravy to the thickness of your liking. I recommend a nice milk shake type consistency. Once it's at it's desired consistency, add your vegetables. This is where I add my jalapenos
Drain your rice, and put it in a serving bowl. Add the gravy and vegetables and stir until it's all mixed together.
Serve and Enjoy!
