Jaci's Vegan Mexi Bake
1 can (14 ounces) diced tomatoes or14 ounces fresh tomatoes, diced
2 cups black beans
2 cups whole grain rice
2 medium chilies, diced
1 corn cob, kernels cut
3 tablespoons chili powder
salt and pepper, to taste
1 cup vegan cheddar (I use Daiya)
1. Preheat oven to 350 degrees F. Mix all ingredients except cheese in bowl.
2. Place in oven safe dish. Place dish in oven for 20 minutes, uncovered.
3. Remove from oven, sprinkle with cheese, place back in oven uncovered for10-15 minutes. Enjoy!
