Italian Spring Primavera

What you need: 

1 medium zucchini
1 cup broccoli florets
1 cup raw olives, sliced
1/2 cup sundried tomatoes
3 shiitake mushrooms
1 tablespoon basil
1 tablespoon oregano
1 tablespoon balsamic vinegar
salt and pepper, to taste
drizzle olive oil
1/2 avocado, thinly sliced
1 red pepper, sliced

What you do: 

1. If you have one of those handy kitchen gadgets known as a spiralizer, you will use it to make faux pasta from the zucchini. In the event that you don’t have one, you can grate or finely peel the zucchini lengthwise as a suitable substitute. Place zucchini ‘noodles’ in serving bowl.
2. Add all remaining ingredients, drizzle with olive oil, toss well and season to taste.
3. Garnish with avocado slices and red pepper.
