Italian Okra

What you need: 

1 (16 ounce) bag frozen cut okra (I use Pictsweet brand or fresh when in season)
1 (14 1/2 ounce) can Italian diced tomatoes, drained
1/2 cup green olives, sliced
1 tablespoon balsamic vinegar
1 teaspoon Italian seasoning
dash crushed red pepper flakes
salt, to taste

What you do: 

1. If you have a veggie steamer, empty entire bag of frozen cut okra, or follow cooking instructions on package. Steam 15 minutes until tender, but still bright green. Empty in a large bowl.
2. Add remaining ingredients (tomatoes, olives, balsamic vinegar, Italian seasoning, red pepper flakes, and salt).
3. Toss well, and serve immediately.
A quick and tasty healthy southern side dish with an Italian twist.
