Irish Stew

What you need: 

1 onion, chopped
3 potatoes, cubed
2 carrots, chopped
1 parsnip, chopped
1 small swede (rutabaga), chopped
chopped parsley, to taste
1/2 cup vegetable stock, or more
1/2 (15-ounce) can butterbeans (optional)
1 (8-ounce) package vegan steak chunks (optional)
15 button mushrooms, halved

What you do: 

1. Heat oil in a pan over medium heat. Add onion; saute for 1 minute.
2. Add potatoes, carrots, parsnip, swede, and parsley; sweat for 5 minutes.
2. Add vegetable stock and butterbeans or vegan steak; lower heat to the lowest possible setting and simmer for 45 minutes, adding stock as needed.
4. Add mushrooms; cook 10 minutes.
This is excellent on miserable winter evenings, and tastes even better next day!!!

SO HOW'D IT GO?

i crossed this recipe with the unbeef stew II recipe (basically i made this and added a little worchestershire, balsamic vinegar, soy sauce, thyme and rosemary). it took more like an hour and a half for everything to get soft but it was worth the wait. very, very yummy, warm and comforting. btw, i left out the "steak"... i can only afford that stuff when there's a 2 for 1 sale! but it was great without it!

A root vegetable that originated as a cross between the cabbage and the turnip :D

What is a "swede"?

LOL I was thinking the same thing. My bf suggested we use one of the swedes he works with, but he said they're pretty tall. Good thing it's a rutabaga.
