Indian Dal

What you need: 

1 medium onion, chopped
1 small hot pepper, minced
2 cloves garlic, minced
1/2 cup vegetable oil
1 cup small red lentils
1 teaspoon cumin
1 teaspoon coriander
1/8 teaspoon cardamom
1/4 teaspoon cayenne
3/4 teaspoon garlic powder
1/8 teaspoon ginger
1 teaspoon salt
1/4 teaspoon pepper

What you do: 

1. Place onion, garlic, and hot pepper in a pot, cover with oil (be generous with the oil ;they should swim in it). Let all of it simmer, about 5 minutes. Add lentils, and stir.
2. Add spices stir, add water to cover lentils. Cook at medium to medium high.
3. You will have to keep checking because the water cooks down and you will have to add more to make the dal the consistency you like. Stir often because it helps the lentils cook down well.
4. Taste and adjust seasoning. Be aware that you don't want too much cardamom and ginger; they take control of flavors, unlike cumin and coriander.
Serve with spinach, naan, and rice.

Tasty! I probably used closer to 2 tbsp of vegetable oil, and I threw in a pinch of mustard seeds as well, and since I didn't have a pepper I opted for pepper flakes...Oh and I cooked it with some vegetable broth :) It turned out really well. I served it with rice, asparagus cooked with ginger and cumin, and slices of eggplant seared in a cast iron pan until golden.

I just can't leave this dish alone. Today I made it as written, adding some fresh baby spinach and a can of tomatoes. It is so good, it's comfort food for a cold winter's day. When I get home in the evening it is just exactly what I want.

this recipe is good thanks. i prefer to use whole cumin and coriander seeds in with the oil, 1 tomato diced and shredded cabbage put in at the same time as the water, add in fresh parsley toward the end.. yum!

This was my first time making dal, and I will definetely make it many more times using this recipe! I didn't have any hot pepper, but I added 1 tablespoon of madras curry powder and some more spices. I used about 3/4 cup of thawed spinach and vegetable broth instead of water.

This recipe is so good and so versatile! Today I used split mung beans, and added some cocoanut milk and a can of tomatoes to the mix. Over rice or a baked potato, it's hard to beat!!

Delicious! I did a LOT of alterations: I didn't use nearly 1/2 cup of oil, about 4 large shallots instead of onion, 6 cloves of garlic (I'm a garlic fiend), 1/4 tsp cinnamon instead of cardamom, 1/2 tsp more coriander, 1 tsp curry powder, skipped garlic powder, hot pepper, and ginger powder, used 2 cups of water with 1 cup veggie stock, and fresh ginger instead of powder... Wow, I didn't realize how much I changed it! Served it over Basmati rice. Will definitely be making again!

I forgot to say I added Sweet potato and added the spinach only a few minutes before serving.  ;)

Awesome!  I followed the recipe as best as possible for my husband and I, and added the spinach (well, salad mix) about 1/2 way through cooking time since I was not sure when to add that.  For the kids I made a pot with no hot pepper or cayenne.  We ALL loved it, husband had seconds and one of my kids is already on his 4th helping (I'm on my thrid).  Served this over plain rice and with Aloo Pratha I made yesterday (potato stuffed flatbread) but chapati bread is VERY easy and fast.  Thanks for a great recipe.

I love this recipe!  I make it all of the time.  Tonight I made it with added potatoes, edamame, and tomatoes! LOL I'll add anything to this dish...it's so good.  Easy to clean out the fridge using this recipe too...everything tastes so good in it.  It's like when you're a kid and if you put Ranch dressing on anything, you'd eat it. Haha.  But ewww...ranch dressing and all it's dairy sounds nast-E now :)  This will do!
