If Gods Ate Their Veggies

What you need: 

2 tablespoon soy margarine
1 1 lb bag frozen baby lima beans
1 1/2 cups corn (frozen, canned, or fresh)
8 cherry tomatoes, quartered
1 head garlic (don't panic!)
1 onion, minced
a few enthusiastic dashes tobasco sauce
a few extremely enthusiastic dashes Worcestershire sauce
a little salt and lots of pepper
a biggish drop of olive oil

What you do: 

Simmer the limas in water to cover by about an inch for fifteen minutes. If you're using frozen corn, toss that in during the last two minutes. Drain. Separate your head of garlic and mince 5-7 of the cloves. Coat the rest with your drop of olive oil, and bake for about ten minutes in a 400 degree oven. Youll want a big pan for this next part-- a wok or a dutch oven, even. Melt the butter over medium-high flame, and add the onion and the minced garlic. Give it a couple minutes in the pan, stirring. Now you can add ALL the other stuff to it. Stir it around for about ten minutes. Now you can squeeze in the baked garlic. All the veggies will be crisp tender. You can add a sliced zucchini (I often do), or bell peppers, or potato, or sliced brocolli stems. Serve over rice or pasta.
