Hurried Seitan Supper
300 g (12 oz) prepared seitan
500 g (1 pint) pasta sauce of your choice
1 large onion
1 sweet red bell pepper
1 Anaheim pepper
dried basil to taste
1/4 cup dry white wine
Coarsely chop all vegetables. Sauté in olive oil until onions start to brown.
Add seitan and sauté briefly.
Add remaining ingredients (swish wine in pasta sauce jar to get the last few drops) and season to taste. Simmer until peppers are tender.
Serve with brown rice, wholegrain bread or whole wheat pasta.
