Hummus Sandwich on Pumpernickel Bread

What you need: 

2 slices whole grain pumpernickel bread
2 tablespoons hummus
1/3 cup spinach leaves (I prefer baby spinach)
1/4 cup grape tomatoes, sliced
3-5 slices onion
3-5 slices cucumber
3-5 slices yellow pepper

What you do: 

1. Spread both slices bread with hummus. Cover 1 slice with spinach.
2. Add the rest of the vegetables. Place the second slice firmly on top and slice the sandwich.
If you like, this lends itself well to being warmed in the microwave or toaster oven for 1 minute or so. Serve immediately.
This sandwich lends itself well to pretty much any kind of hummus, but I prefer a hearty veggie one. You can buy it pre-made or make your own by blending fresh vegetables, such as red peppers or broccoli, into your favorite hummus recipe.
Source of recipe: This is one of the easiest sandwiches I've made in a while, and I wrote the recipe on a whim. I literally made it for the first time in the middle of my college's dining hall, using bread I got there and ingredients from the salad bar. I love seeing what happens with just a bit of creativity and minimal effort!
